Acquired in 2012 by Ylber (41 years old) and Coralie Vata (34 years old), the notoriety of this former pizzeria, bankrupt when purchased, has only progressed over the years by delighting the taste buds. Contacted by the culinary guide
A reputation made throughout the four corners of France by “word of mouth and positive comments on the internet and social networks” comment the owners, surprised by this new recognition with the inclusion of their restaurant in the Gault and Millau.
The honors from the mouths of customers have reached the ears of the prestigious gastronomic guide. “We were surprised to receive a call from them at the beginning of the year to tell us that they had selected us for their next 2024-2025 edition.” published in November. Bankrupt to purchase
“A pride” for the owners who care about this small village where they have invested in this pizzeria which they have completely refreshed and enlarged to accommodate its ever-growing clientele: “When we started here, we barely made 20 pizzas per service, now we can serve up to 200, especially on weekends.” So much so that a new expansion is being considered by the owners.
The secret? “Flour, water, yeast, salt” and the skill of the Chefs who handle the fine dough prepared the day before for the next day with spectacular dexterity.
The pizza master brothers
At Pradothe art of pizza is passed down in the family, between brothers, who share space in the kitchen behind the stove. Blood brothers, Ylbert Vatathe owner of the restaurant and Avni Vata exercise their talent together in their prestigious position as pizza chef. A stage set which is the first thing the customer can see when opening the restaurant door.
The lace garnished with the preparation carefully placed on the shovel is ready to be put in the oven for two minutes of cooking. The Vata can reproduce these gestures up to 200 times during a service of up to 50 seats on site, not counting take-away pizzas.
Everything is homemade
At the Prado, the owner insists on it, “everything is homemade“, even the bread, also kneaded on site and taken out of the same Moretti oven.
Perfumes of Italy in this small town of 2,550 souls nestled in the hollow of the Thérain valley which crosses it and awarded a first Flower in 2023 by the “Villes et Villages Fleuris” label.
On the menu, classic recipes like the famous Margarita, but also burgers, among other specialties of an Italian table, with a pinch recalling the Albanian origins of Vata brothers like the leek and bacon special.
