“Traditional cuisine, with local and French products.” This is what Claudine and Jérémy Poswho have taken up two years ago theBuissonnet Auberge has Choisy-au-Bac. Saturday, February 22, the couple will celebrate the two years of their arrival in The inn located at 825 rue des Vinee. Having succeeded Fabien Desmet, they are the fifth owners of the business.
Claudine, indoor, and Jérémy, in the kitchen, have been working together since 2008. Claudine was born in Compiègne and Jérémy in Villers-Cotterêts. Previously, they attended the Hôtelier Lycée de Soissons, by which a certain Philippe Etchebest passed.
“We have always worked in the starred restaurants, me in the dining room and Jérémy e Cuisine,” explains Claudine. But we no longer wanted this pressure, that the owners feel, but also the employees. ”
Twenty covers
The restaurant of Claudine and Jérémy Posts displays twenty covers, with terrace in summer. The menu change every two weeks.
Right now: “Leek Cream with Maroilles” or “Tartare d’Epadon Militre de Coco lemon” as a starter; “Black location compote with fennel” or “braised beef paleron, parsnip and vegetable puree” in a dish; Haust-de-France cheeses, chocolate mousse or beautiful helene pear for dessert.
At lunch, the dessert flat starter menu costs € 29. At dinner, it costs € 36 (with cheeses in addition).
For the bread, the couple works with the La Pierre bakery that turns. The fruits and vegetables come from the primary max.
Their career started near Annecy
Claudine and Jérémy Posts have lived together most of their professional life. They started near Annecy, at the Menthon-Saint-Bernard Palace in the late 2000s.
From 2010 to 2012, Jérémy Pos was chef at the traditional restaurant “L’Antonio etc”. During the same period, Claudine was a chef de rank at the Le Clos des Sens restaurant in Annecy (two Michelin stars) then at “The new house of Marc Veyrat” at Chef Yoann Conte, in Veyrier du Lac.
The Champagne plate, has the good idea, the edge of the forest
The couple are found at the Champagne plate, (three stars in the Michelin guide) at Arnaud Lallement in Tinqueux, near Reims. Claudine is a butler there and Jérémy is there (side fish) there. Experience lasts about three years, from 2012 to 2015.
Their route then separates, temporarily. Jérémy becomes the chef of the Scaramouche cuisine in Senlis (2015), then from the Hostellerie du Royallieu in Compiègne, until January 2017. Claudine became a rank of rank at the Auberge has the good idea at Saint-Jean-aux- Wood (a Michelin star) from March 2015 to March 2016, then became room manager at the edge of the forest (a star) in Etouy, from April 2016. Jérémy He joined it in February 2017, as a second in the kitchen of chef Nicolas Leclerc.
